PepsiCo Swaps Artificial Dyes for Natural Colors in Doritos and Cheetos

PepsiCo is undertaking a significant project at its global headquarters in Plano, Texas, focused on reformulating popular snacks like Doritos and Cheetos. The goal is to replace artificial dyes with natural alternatives derived from vegetables and spices. This includes ingredients such as beets, radishes, paprika, annatto, and turmeric.

The shift to natural coloring agents presents new challenges for food manufacturers. These natural dyes are sensitive to light and oxygen, requiring careful formulation to maintain their color and stability throughout the product's shelf life. PepsiCo is working to ensure the final product delivers the expected visual experience for consumers.

The company is conducting extensive consumer testing to evaluate the new recipes. Initial feedback on the naturally colored Cheeto Puffs has been positive, with consumers acknowledging the familiar orange hue, even if slightly less vibrant than the original. PepsiCo is also developing versions of the snacks without any added colors or flavors, with promising results for the Nacho Cheese Doritos.

PepsiCo acknowledges that consumers associate certain colors with specific flavors and experiences. The company is working to create a sustainable supply chain for natural dyes, coordinating with color and seasoning suppliers to source ingredients globally. This transition involves managing costs while ensuring the desired visual appeal of the snacks.

The initiative extends beyond Doritos and Cheetos, with PepsiCo actively removing artificial colors and flavors across its entire product line. The company has already eliminated artificial dyes from 60% of its products and plans to have all Lay’s and Tostitos chips free of artificial colors and flavors by the end of the year. Other major food companies are also making similar changes.

The move to natural dyes is driven by consumer demand and concerns about the potential health effects of artificial dyes. While the FDA considers these dyes safe for most, some research suggests a link to hyperactivity in certain children. Natural dyes, while potentially offering a healthier alternative, may also carry risks, such as allergic reactions in some individuals.
