As traditional pubs across the UK grapple with the financial pressures of a cost-of-living crisis, a food truck positioned in the scenic Scottish Highlands is flourishing. Known as the Applecross Inn-Side Out, it is adjacent to the Applecross Inn in a remote area that can only be accessed via a winding coastal route or the renowned 'Bealach na Ba,' one of Scotland's tallest passes. Owner Judish Fisher MBE mentions that although the truck has felt the impact of increased utility and food prices, it has managed to rebound quickly due to the stunning views and popular pub-style fare.

Judish Fisher, who has been running this business for two decades and worked 17 years at the inn prior to that, highlights how the beautiful setting and locally sourced food continue to hold an everlasting appeal. The truck serves approximately 250 customers daily and generates around £2,000 in sales. Fisher explained that the truck was established to ease the pressure on the inn’s kitchen, which frequently turned away patrons due to high demand for food. The popularity of the takeaway service allows customers to enjoy their meals either outdoors or from the comfort of their cars, demonstrating that demand remains strong.

While many establishments are compelled to diversify their offerings in response to economic fluctuations, Fisher's foresight with the food truck has enabled the business to expand its services and collaborate with nearby local businesses. For instance, the truck features ice cream from Aron's ices, a local company, and freshly roasted coffee, reflecting strong community ties which were particularly beneficial during the pandemic. Fisher recalls how the truck became a crucial takeaway option during COVID-19, allowing locals to support the establishment by purchasing food to go or dine nearby. Though the majority of patrons are tourists, the captivating waterfront location near one of Scotland's most picturesque routes draws visitors, further enhancing the truck's success.

The unique dining experience offered by the Applecross Inn-Side Out has garnered praise on TripAdvisor, particularly for its acclaimed fish and chips. Reviews highlight the quality of the food in relation to its freshness, with one visitor noting that the seafood is among the best they had ever experienced. Comments from recent diners reflect their satisfaction with dishes like crispy monkfish and traditional haddock and chips, accompanied by commendations for the friendly staff and authentic Highland hospitality. Operating from spring to autumn, the Applecross Inn-Side Out remains a testament to resilience in the hospitality sector.
