Tawara's apiary, established in 1945, is located near the Sumiyoshigawa river and Mount Rokkosan, where his bees diligently collect nectar from Somei-Yoshino and Yamazakura cherry trees during the fleeting bloom. This short window results in a small batch of honey with a subtle yet distinct sakura flavor.
However, the honey's sourness and limited quantity posed obstacles to its popularity. Seeking a solution, Tawara noticed the growing trend of craft cola in Japan. He envisioned a cola sweetened with his sakura honey, offering a unique and local twist on the classic beverage.
At a regional meeting, Tawara presented his idea to a group of entrepreneurs and lawyers. His proposal was met with enthusiasm, particularly by Takao Shiojiri, owner of Cafe Shokudo Lodge in Nishinomiya. Together, they applied for and received a grant from a prefectural fund to support their venture.
Tawara began crafting his cola syrup, using only honey for sweetness, resulting in a pinkish beverage with fewer calories than traditional colas. He hopes this innovative drink will raise awareness about the high-quality honey produced in Kobe, surrounded by the natural beauty of Mount Rokkosan.
The sakura honey craft cola will be available for purchase starting in April at Tawara Apiaries, Cafe Shokudo Lodge, and other cafes in Kobe. This unique collaboration promises a refreshing and flavorful experience, showcasing the ingenuity and dedication of local beekeepers and entrepreneurs.
